Instructions

  1. Prepare the Cheese Spread: In a mixing bowl, beat together the finely shredded sharp cheddar, softened cream cheese, drained and chopped pimentos, mayonnaise, garlic powder, and cayenne pepper until the mixture becomes smooth and spreadable.
  2. Cut the Bread: Using star-shaped cutters, stamp out star shapes from each slice of white bread, ensuring you have an even number of stars to make sandwiches.
  3. Assemble the Sandwiches: Spread a generous amount of the prepared pimento cheese filling onto half of the bread stars. Then, place the remaining bread stars on top to form sandwich bites.
  4. Chill Before Serving: Place the assembled sandwich bites in an airtight container and chill them in the refrigerator for up to 24 hours. Serve cold as festive finger foods.
