Ingredients

For the Flambéed Whiskey Apples:

  • 1 Granny Smith apple, sliced

  • 2-3 tablespoons brown sugar

  • 1/4 teaspoon salt

  • 1/2 teaspoon cinnamon

  • 1/4 teaspoon cardamom

  • 1/4 teaspoon nutmeg

  • 1/4 teaspoon ground ginger

  • 1-2 tablespoons whiskey (such as Jameson)

For the Dark Miso Maple Butter Sauce:

  • 150g butter

  • 100-125g maple syrup

  • 1 tablespoon dark miso paste (strained)

For the Honey Butter:

  • Equal parts honey and butter, emulsified

For Serving:

  • Pancakes (your favorite recipe)

  • Greek yogurt (optional)

  • Fresh or frozen red fruits (optional)

  • Powdered sugar for dusting

Instructions

Prepare the Whiskey Apples:

  1. In a pan over low heat, sauté the sliced apples until starting to soften.

  2. Add the brown sugar, salt, cinnamon, cardamom, nutmeg, and ground ginger. Stir and reduce slightly.

  3. Carefully add whiskey and flambé to burn off the alcohol. Cook until the apples are thick and creamy. Set aside.

Make the Dark Miso Maple Butter Sauce: 4. Melt the butter and maple syrup together over low heat. 5. Strain in the dark miso paste and whisk until smooth and emulsified.

Prepare the Honey Butter: 6. In a small pot, combine equal parts honey and butter. Whisk until emulsified and thickened. Refrigerate if desired.

Assemble the Pancakes: 7. Make your favorite pancakes and stack them onto a serving plate. 8. Drizzle generously with the miso maple butter sauce. 9. Top with flambéed whiskey apples and a dollop of honey butter. 10. Optionally, add Greek yogurt, fresh or frozen red fruits, and dust lightly with powdered sugar.

  1. Serve immediately and enjoy!

Notes

  • Always flambé with caution — turn off the burner when adding whiskey, and ignite carefully with a long lighter.

  • Adjust the miso amount to balance between sweet and savory according to your taste.

  • Use thick, hearty pancakes (like buttermilk pancakes) to hold up under the saucy toppings.

  • Red fruits like raspberries, strawberries, or cherries add a bright, tart contrast.
