This hearty One Pot Bolognese Cheesy Pasta Bake features rich, meaty sauce, perfectly cooked pasta, and a melty golden cheese topping — an easy, comforting dinner made in just one pot, ideal for busy weeknights.

Ingredients

  • 250g fusilli or rotini pasta

  • 300g ground beef

  • 1 small onion, diced

  • 2 cloves garlic, minced

  • 1 can (400g) crushed tomatoes

  • 1 tablespoon tomato paste

  • 1 teaspoon dried oregano

  • 1 teaspoon dried basil

  • 1/2 teaspoon salt

  • 1/2 teaspoon pepper

  • 1 cup shredded mozzarella cheese

  • Fresh basil leaves for garnish

  • 2 tablespoons olive oil

  • 2 cups water or beef broth

Instructions

  1. Preheat the oven to 375°F (190°C).

  2. In a large oven-safe pot, heat olive oil over medium heat.

  3. Add the diced onion and garlic, sautéing until fragrant and translucent.

  4. Add the ground beef, breaking it apart as it cooks, until browned.

  5. Stir in the crushed tomatoes, tomato paste, oregano, basil, salt, and pepper.

  6. Add the dry pasta and water (or beef broth), mixing thoroughly to combine.

  7. Cover the pot with a lid or foil and bake for 25 minutes.

  8. Remove the lid, sprinkle mozzarella cheese evenly over the top, and bake uncovered for another 10 minutes until the cheese is golden and bubbly.

  9. Garnish with fresh basil leaves and serve hot.

Notes

  • Use beef broth for a richer flavor compared to water.

  • Substitute ground beef with ground turkey or plant-based mince for a lighter version.

  • Add a pinch of chili flakes for a spicy kick.

  • Fresh mozzarella slices can be used for an even gooier top.
