Warmly spiced with cinnamon, ginger, and molasses, these old-fashioned molasses cookies are chewy on the inside, crisp on the outside, and perfect for holiday baking or cozy afternoons with a cup of tea.

Ingredients

  • 1 large egg
  • ⅔ cup oil
  • 1 cup sugar
  • ⅓ cup unsulphured molasses
  • 1½ tsp cinnamon
  • 1½ tsp ground ginger
  • ½ tsp nutmeg
  • ½ tsp Kosher salt
  • 2 tsp baking soda
  • 2¼ cups flour (unbleached or all-purpose)
  • For Rolling:
  • Sugar
  • Cinnamon

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large bowl, beat the egg, then whisk in oil and sugar.
  3. Add molasses, cinnamon, ginger, nutmeg, salt, and baking soda. Mix well.
  4. Stir in the flour until a stiff dough forms.
  5. Roll dough into 1 tablespoon-sized balls.
  6. Roll each dough ball in a mixture of cinnamon and sugar.
  7. Place on an ungreased baking sheet about 3 inches apart.
  8. Bake for 12–13 minutes, until tops are crackled and golden.
  9. Let cool before serving or storing in an airtight container.

Notes

  • For a softer cookie, reduce the baking time by 1 minute.
  • These cookies freeze well and are perfect for make-ahead holiday treats.
  • For a festive twist, add a pinch of ground clove or cardamom to the dough.
  • Use unsulphured molasses for the best flavor and traditional texture.
