Ingredients

Scale

Truffle Base

  • 1 (16-ounce) package Nutter Butter cookies
  • 8 ounces brick-style cream cheese, softened
  • 1/2 cup creamy peanut butter

Coating and Topping

  • 1 pound vanilla almond bark

Instructions

  1. Grind Cookies: Add the Nutter Butter cookies to a food processor and pulse until finely ground. Reserve 1 tablespoon of the cookie crumbs for topping later.
  2. Mix Ingredients: In a mixing bowl, combine the remaining cookie crumbs, softened cream cheese, and creamy peanut butter. Beat with an electric hand mixer until the mixture is smooth and fully combined.
  3. Form Truffle Balls: Use a 1-tablespoon cookie scoop to portion the mixture evenly, then roll each portion into a ball. Place the balls on a prepared baking sheet and freeze them for 30 minutes to firm up.
  4. Melt Almond Bark: Melt the vanilla almond bark according to the package directions, stirring continuously until smooth and fully melted.
  5. Dip Truffles: Remove the frozen truffles and dip each one into the melted almond bark coating, allowing excess to drip off. Place the coated truffles back onto the baking sheet.
  6. Decorate: Transfer any remaining almond bark into a piping bag or a zip-top bag with the tip snipped off. Drizzle over the dipped truffles.
  7. Apply Topping and Set: Sprinkle the reserved cookie crumbs over the decorated truffles. Let the coating set until firm before serving or storing.
