Delicious and healthy no-bake pecan pie bites made from whole-food ingredients like pecans, dates, and chocolate. These tasty treats require minimal prep time, no baking, and are perfect for a quick snack or dessert with a rich, naturally sweet flavor.

Ingredients

Scale

Dry Ingredients

  • 1 cup pecans
  • 1 cup pitted dates, soaked
  • 2 tbsp coconut sugar or monk fruit
  • Pinch of sea salt
  • 1 tsp vanilla extract
  • 1 tsp cinnamon (optional)

Coating

  • 1 1/4 cup chocolate chips

Instructions

  1. Prepare Dough: Add the pecans, soaked dates, coconut sugar (or monk fruit), sea salt, vanilla extract, and cinnamon (if using) to a food processor. Process until a sticky dough forms, scraping down the sides occasionally to ensure even mixing. This may take several minutes.
  2. Shape Bites: Roll the sticky mixture into bite-sized balls and place them on a lined cookie sheet. Flatten each ball slightly with your palm to form small discs. Place the cookie sheet in the freezer for about 15 minutes to help firm up the bites.
  3. Melt Chocolate: While the bites firm up, melt the chocolate chips until smooth, either using a double boiler or microwave in short bursts, stirring frequently to prevent burning.
  4. Coat Bites: Dip each chilled pecan pie bite into the melted chocolate to coat it thoroughly. Return the coated bites to the cookie sheet. Press a whole pecan on top of each bite as a garnish.
  5. Freeze to Set: Place the cookie sheet back in the freezer until the chocolate hardens completely, about 1-2 hours, before serving.

Notes

  • Store the pecan pie bites in an airtight container in the freezer to keep them fresh and firm.
  • If you don’t eat or like pecans, substitute them with any other preferred nuts such as walnuts or almonds.
