Indulge in these rich and decadent warm chocolate cakes with molten centers, perfect for cozy winter evenings. The luscious dark chocolate combined with a buttery, tender crumb creates a heavenly dessert that melts in your mouth and warms your soul.

Ingredients

Scale

Chocolate Mixture

  • 100g dark chocolate
  • 100g unsalted butter

Batter

  • 3 large eggs
  • 100g granulated sugar
  • 50g all-purpose flour

Instructions

  1. Melt Chocolate and Butter: In a heatproof bowl over simmering water, melt the dark chocolate and unsalted butter together until smooth and well combined. Remove from heat and allow to cool slightly.
  2. Whisk Eggs and Sugar: In a separate bowl, whisk the eggs and granulated sugar vigorously until the mixture turns pale and slightly thickened, about 3 to 4 minutes.
  3. Combine Mixtures: Gradually pour the melted chocolate and butter into the egg mixture, stirring gently to combine, ensuring the batter remains smooth and even.
  4. Fold in Flour: Sift the all-purpose flour over the chocolate batter and fold gently using a spatula to avoid deflating the mixture, until just incorporated.
  5. Prepare Ramekins: Grease 4 to 6 ramekins generously with butter and lightly dust with flour or cocoa powder to prevent sticking.
  6. Fill and Bake: Pour the batter evenly into the ramekins. Bake in a preheated oven at 200°C (390°F) for 10 to 12 minutes or until the edges are set but the centers remain soft and molten.
  7. Serve Warm: Remove from oven and let cool for 1 to 2 minutes. Run a knife around the edges to loosen and carefully invert each cake onto a plate. Serve immediately for the best molten effect.

Notes

  • Use high-quality dark chocolate (70% cocoa recommended) for the best flavor.
  • Do not overbake as the center should remain gooey and molten.
  • Allow ramekins to cool slightly before unmolding to prevent breakage.
  • Optional toppings include a dusting of powdered sugar, fresh berries, or a scoop of vanilla ice cream.
  • For extra richness, add a teaspoon of espresso powder to the chocolate butter mixture.
