Ingredients

Scale

For the Cake Layers

  • 2 cups All-Purpose Flour (or gluten-free flour as a substitute)
  • 3/4 cup Cocoa Powder (Dutch-processed preferred)
  • 1 1/2 cups Granulated Sugar (or brown sugar for moisture)
  • 1 tbsp Baking Powder (check for freshness)
  • 1/2 tsp Salt (kosher salt recommended)
  • 3 large Eggs (substitute with flax eggs for vegan)
  • 1 cup Milk (or almond milk for dairy-free)
  • 2 tsp Vanilla Extract (or vanilla beans for enhanced flavor)

For the Strawberry Layer

  • 1 cup Strawberries (Pureed) or raspberries as a substitute

For the Chocolate Layer

  • 1 cup Melted Chocolate (dark chocolate recommended)

For the Frosting

  • 8 oz Cream Cheese (or vegan cream cheese)
  • 2 cups Confectioners’ Sugar (adjust to desired sweetness)

Optional Garnishes

  • 1 cup Fresh Strawberries for decoration
  • 1/2 cup Chocolate Shavings
  • 1/2 cup Sprinkles for a festive touch

Instructions

  1. Preheat and Prepare Pans: Preheat the oven to 350°F (175°C). Grease three round cake pans lightly and dust them with flour to prevent sticking.
  2. Mix Dry Ingredients: In a mixing bowl, whisk together all-purpose flour, cocoa powder, granulated sugar, baking powder, and salt until well combined.
  3. Combine Wet Ingredients: In a separate bowl, whisk the eggs, milk, and vanilla extract together until smooth. Then, add to the dry ingredients, mixing until just combined for a smooth batter.
  4. Divide and Flavor Batter: Divide the batter evenly into three bowls. Fold melted dark chocolate into one bowl for the chocolate layer, pureed strawberries into the second for the strawberry layer, and leave the third as the plain vanilla layer.
  5. Bake the Layers: Pour each flavored batter into the prepared cake pans equally. Bake in the preheated oven for 25-30 minutes or until a toothpick inserted comes out clean.
  6. Cool the Cakes: Let the cake layers cool in the pans for 10 minutes, then transfer them carefully onto a wire rack to cool completely.
  7. Frost and Assemble: Spread cream cheese frosting evenly over the chocolate layer. Stack the strawberry layer on top, frost again, and then add the vanilla layer followed by a final frosting layer.
  8. Decorate: Garnish the assembled cake with fresh strawberries, chocolate shavings, and sprinkles as desired before serving.

Notes

  • You can substitute all-purpose flour with gluten-free flour to make the cake gluten-free.
  • For a vegan version, replace eggs with flax eggs, milk with almond milk, and use vegan cream cheese.
  • Adjust confectioners’ sugar in frosting to suit your desired sweetness.
  • Ensure the baking powder is fresh to achieve a good rise in the cake.
  • Allowing the cake layers to cool completely before frosting prevents melting and sliding.
