  • 1 1/2 cups all-purpose flour
  • 1 tsp baking soda
  • 1 tsp ground cinnamon
  • 1/4 tsp salt
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1/4 cup melted butter
  • 1/4 cup plain Greek yogurt or sour cream
  • 1 tsp vanilla extract
  • 1 1/2 cups peeled, diced fresh peaches
  • For the Glaze:
  • 1/2 cup powdered sugar
  • 12 tsp milk or cream
  • 1/4 tsp vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan.
  2. In a medium bowl, whisk together flour, baking soda, cinnamon, and salt.
  3. In a separate bowl, mix brown sugar, granulated sugar, egg, melted butter, yogurt, and vanilla extract until smooth.
  4. Stir dry ingredients into the wet mixture until just combined. Fold in the diced peaches gently.
  5. Pour the batter into the prepared loaf pan. Bake for 50–60 minutes, or until a toothpick inserted in the center comes out clean.
  6. Let bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  7. Mix glaze ingredients and drizzle over the cooled bread before serving.

Notes

  • Add chopped pecans or walnuts for extra texture and flavor.
  • Don’t overmix after adding peaches to keep the loaf soft and tender.
  • Store at room temperature for up to 3 days, or in the fridge for up to 1 week.
