  • 1/4 cup granulated sugar
  • 6 tbsp unsalted butter, melted

  • 1/3 cup cocoa powder
  • 1/2 cup all-purpose flour
  • 1/4 tsp salt
  • 1/2 cup granulated sugar (for pudding)
  • 1/4 cup unsweetened cocoa powder
  • 1/4 cup cornstarch
  • 2 cups whole milk
  • 4 oz semi-sweet chocolate, chopped
  • 1 tsp vanilla extract (for pudding)
  • 1 1/2 cups heavy whipping cream
  • 2 tbsp powdered sugar
  • 1/2 tsp vanilla extract (for topping)
  • Maraschino cherries, for garnish
  • Chocolate shavings or cookie crumbs (optional for garnish)

Instructions

  1. Preheat oven to 350°F (175°C). Mix cookie crumbs, sugar, and melted butter. Press into a 9-inch pie dish. Bake for 8 minutes. Set aside to cool.
  2. To make brownie layer: Melt butter in a saucepan. Remove from heat and stir in sugar, eggs, and vanilla. Add cocoa powder, flour, and salt; mix until smooth. Spread over crust and bake for 18–20 minutes. Cool completely.
  3. To make pudding layer: In a medium saucepan, whisk together sugar, cocoa powder, and cornstarch. Gradually whisk in milk. Cook over medium heat, whisking constantly, until thickened (8–10 minutes).
  4. Remove from heat, stir in chopped chocolate and vanilla until smooth. Let cool slightly, then pour over cooled brownie layer. Chill for at least 2 hours.
  5. Whip cream with powdered sugar and vanilla until stiff peaks form. Pipe or spoon over chilled pie.
  6. Garnish with a maraschino cherry and optional chocolate shavings or cookie crumbs. Serve cold.
