  • 3/4 cup all-purpose flour
  • Mint Frosting Layer:
  • 1/2 cup unsalted butter, softened
  • 2 cups powdered sugar
  • 2 tablespoons milk
  • 1 teaspoon peppermint extract
  • Green food coloring, as desired
  • Chocolate Ganache Topping:
  • 1/2 cup heavy cream, warmed
  • 1 cup semi-sweet chocolate chips

Instructions

  1. To Make the Brownies: Preheat oven to 350°F (175°C) and line a 9-inch square baking dish with parchment paper.
  2. Place the chocolate chips in a large heat-safe bowl. Melt the butter in the microwave and pour it over the chocolate chips. Let sit 1–2 minutes, then whisk until smooth.
  3. Add granulated sugar, brown sugar, eggs, and vanilla extract. Mix until well combined.
  4. Stir in flour and salt until just combined. Pour batter into prepared baking dish and spread evenly.
  5. Bake for 35–40 minutes, or until a toothpick inserted in the center comes out with only a few moist crumbs. Let cool completely.
  6. To Make the Mint Layer: In a mixer bowl, beat the softened butter until creamy. Gradually add powdered sugar, milk, peppermint extract, and green food coloring. Mix until smooth and fluffy.
  7. Spread mint frosting evenly over cooled brownies.
  8. To Make the Ganache: Heat the cream in a small saucepan or microwave-safe bowl until just hot, not boiling. Pour over chocolate chips and let sit 1 minute. Stir until melted and smooth.
  9. Spread ganache gently over mint frosting. Chill in the fridge for 15 minutes or until ganache is set.
