  • 1/2 cup heavy cream (for topping)

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C) to prepare for baking the tartlets.
  2. Prepare Tart Shell: In a mixing bowl, combine the all-purpose flour and softened unsalted butter. Mix until the texture becomes crumbly. Add the granulated sugar and press the mixture evenly into mini tartlet pans, forming the tart shells.
  3. Make Pistachio Filling: Using a food processor, blend the shelled pistachios until finely chopped. Add granulated sugar and eggs to the processor and pulse until the mixture becomes smooth and well combined.
  4. Fill Tartlets: Pour the pistachio filling into the prepared tart shells, filling each about three-quarters full to allow space for rising during baking.
  5. Bake Tartlets: Place the tartlet pans into the preheated oven and bake for 20-25 minutes, or until the tops are golden brown and the filling is set.
  6. Cool and Serve: Remove the tartlets from the oven and let them cool on a rack. Once cooled, carefully remove them from the pans and finish each tartlet with a dollop of freshly whipped cream before serving.
