Ingredients

For the crust (universal base):

  • 1 1/2 cups graham cracker crumbs

  • 1/4 cup melted butter

  • 2 tbsp sugar

For the cheesecake filling:

  • 16 oz cream cheese, softened

  • 2/3 cup granulated sugar

  • 2 large eggs

  • 1/4 cup sour cream

  • 1 tsp vanilla extract

  • 1 tbsp all-purpose flour

Instructions

  1. Preheat oven to 325°F (160°C). Line a mini muffin tin or silicone mold with liners or grease lightly.

  2. Mix crust ingredients together and press about 1 tbsp into each cavity. Bake for 5 minutes, then set aside.

  3. In a bowl, beat cream cheese until smooth. Add sugar, then eggs one at a time, mixing well. Stir in sour cream, vanilla, and flour.

  4. Pour cheesecake batter over crusts until almost full.

  5. Bake for 15–18 minutes or until centers are just set. Let cool completely, then refrigerate for at least 2 hours.
