Middle Eastern Carrot Jam with Orange and Pistachio is a fragrant, spiced preserve bursting with sweet carrots, zesty orange, warm spices, and crunchy pistachios. Ingredients

  • 2 cups grated carrots

  • 1 cup freshly squeezed orange juice

  • Zest of 1 large orange

  • 1 1/2 cups granulated sugar

  • 1 tablespoon lemon juice

  • 1/4 teaspoon ground cardamom

  • 1/4 teaspoon ground cinnamon

  • 1/2 cup shelled pistachios, roughly chopped

  • Pinch of salt

Instructions

  1. In a medium saucepan, combine grated carrots, orange juice, and sugar over medium heat. Stir until sugar is dissolved.

  2. Add orange zest, lemon juice, cardamom, cinnamon, and a pinch of salt. Stir to blend the flavors.

  3. Bring mixture to a gentle boil, then reduce heat to low and simmer for 25–30 minutes, stirring occasionally, until thickened and jam-like.

  4. Stir in chopped pistachios and simmer for an additional 5 minutes.

  5. Remove from heat and allow to cool slightly.

  6. Spoon into sterilized jars or serve warm on toasted bread.

  7. Store in the refrigerator for up to 2 weeks.
