2 cups grated carrots
1 cup freshly squeezed orange juice
Zest of 1 large orange
1 1/2 cups granulated sugar
1 tablespoon lemon juice
1/4 teaspoon ground cardamom
1/4 teaspoon ground cinnamon
1/2 cup shelled pistachios, roughly chopped
Pinch of salt
In a medium saucepan, combine grated carrots, orange juice, and sugar over medium heat. Stir until sugar is dissolved.
Add orange zest, lemon juice, cardamom, cinnamon, and a pinch of salt. Stir to blend the flavors.
Bring mixture to a gentle boil, then reduce heat to low and simmer for 25–30 minutes, stirring occasionally, until thickened and jam-like.
Stir in chopped pistachios and simmer for an additional 5 minutes.
Remove from heat and allow to cool slightly.
