Ingredients

Scale

Sandwich Base

  • 2 telera or bolillo rolls

Chicken and Marinade

  • 1 lb boneless skinless chicken breast or thighs
  • 1 tbsp chipotle in adobo or preferred marinade
  • Juice of 1 lime
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Olive oil for cooking

Toppings and Fillings

  • 1 avocado, sliced
  • ½ cup refried beans
  • ½ cup shredded lettuce
  • 1 tomato, sliced
  • ¼ onion, thinly sliced
  • ¼ cup pickled jalapeños
  • ¼ cup queso fresco or mozzarella cheese
  • 2 tbsp mayonnaise or Mexican crema

Instructions

  1. Marinate the Chicken: In a bowl, combine the chicken with chipotle in adobo sauce, lime juice, minced garlic, salt, and pepper. Mix well and let it marinate for at least 30 minutes to absorb all the flavors.
  2. Cook the Chicken: Heat olive oil in a skillet over medium heat. Pan-sear the marinated chicken for 5 to 6 minutes on each side until fully cooked and nicely charred. Remove from heat and let it rest for a few minutes before slicing thinly.
  3. Toast the Bread: Lightly toast the telera or bolillo rolls either in a skillet or toaster until the crust is golden and slightly crisp.
  4. Assemble the Sandwich: Spread the refried beans evenly on the bottom half of each toasted roll. Spread mayonnaise or crema on the top halves.
  5. Add Fillings: Layer the sliced grilled chicken on top of the beans. Add sliced avocado, crumbled queso fresco or mozzarella, shredded lettuce, tomato slices, thinly sliced onion, and pickled jalapeños to build a flavorful and satisfying sandwich.
  6. Serve: Close the sandwich with the top half of the bread and serve immediately with your choice of chips, fries, or a refreshing green salad for a complete meal.

Notes

  • For extra heat, add more chipotle or jalapeños according to your taste preference.
  • Telera and bolillo breads are traditional Mexican sandwich rolls; alternatives like ciabatta or French rolls can be used if unavailable.
  • Marinating the chicken longer than 30 minutes can enhance the flavor even more.
  • If you prefer, you can grill the chicken outdoors instead of pan-searing for a smoky flavor.
  • Using crema instead of mayonnaise adds a traditional Mexican touch and creaminess.
