  • 1/2 tsp black pepper
  • 1/2 tsp red pepper flakes
  • 1 cup spinach
  • 1/2 tsp lemon zest
  • 4 large eggs (at room temperature)
  • fresh basil

Instructions

  1. Prepare the vegetables and seasoning: In a baking dish, combine the tomatoes, red bell pepper, red onion, garlic, olive oil, oregano, salt, thyme, black pepper, and red pepper flakes. Mix well to ensure that all the vegetables are coated with the seasoning and oil.
  2. Add the feta and spinach: Nestle the block of feta cheese in the center of the vegetables and scatter the spinach around it. Sprinkle the lemon zest over everything.
  3. Bake: Place the baking dish in a preheated oven at 400°F (200°C) and bake for approximately 20 minutes or until the vegetables are tender and the feta is soft and slightly golden.
