Ingredients

Scale

Cookie Dough

  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1 1/2 teaspoons vanilla extract
  • 1/4 teaspoon salt
  • 1/2 teaspoon baking powder
  • 2 cups all-purpose flour
  • Gel food coloring (dark pink)

Instructions

  1. Make the dough: In a large bowl or stand mixer, beat together the softened butter and granulated sugar until the mixture becomes light and fluffy. Add the egg and vanilla extract, followed by salt and baking powder, mixing well and scraping the bowl as needed. Gradually incorporate the flour, increasing mixer speed as needed until the dough is fully combined with no streaks.
  2. Add color: Divide the dough into two equal halves. Transfer one half to a clean bowl and set aside. Add a small amount of dark pink gel food coloring to the remaining dough and beat until the color is uniform and no streaks remain.
  3. Marble the dough: Pinch off golf ball–sized portions of both colored doughs and roll each into balls. Arrange alternating colored balls on your work surface and gently knead them together until swirls of color appear, taking care not to overmix the dough.
  4. Chill the dough: Shape the marbled dough into a disc, wrap it tightly in plastic wrap, and chill in the refrigerator for 30 to 60 minutes to firm up.
  5. Prepare for baking: Preheat your oven to 350°F (175°C). Line a baking sheet with a silicone baking mat or parchment paper for easy cleanup.
  6. Roll and shape: On a lightly floured surface, roll out the chilled dough to approximately 1/4-inch thickness. Use cookie cutters to cut out desired shapes and place them about 2 inches apart on the prepared baking sheet. Freeze the cut cookies for 15 minutes to help them hold their shape. Gather any scraps, press them together, wrap, and keep chilled for reuse.
  7. Bake the cookies: Bake the cookies at 350°F for 12 minutes. Once baked, allow them to rest on the baking sheet for 2 minutes before transferring to a wire rack to cool completely.
  8. Store: Store cooled cookies in an airtight container at room temperature for up to one week to maintain freshness.

Notes

  • Using gel food coloring prevents the dough from becoming too wet, which can happen with liquid food coloring.
  • Chilling the dough before rolling helps in easier handling and prevents spreading during baking.
  • Freezing the cut cookies before baking helps maintain sharp edges and prevents excessive spreading.
  • These cookies can be decorated further with royal icing or sprinkles after cooling for a more festive touch.
