24 oz lobster meat (claw, knuckle, or tail)
12 tbsp unsalted butter, divided
3 cloves garlic, minced
Juice from 1 lemon
1/4 cup chopped fresh parsley
1/4 cup sherry
2 cups oyster crackers, crushed
35 Ritz crackers, crushed
Salt and pepper, to taste
Preheat oven to 375°F (190°C).
In a saucepan, melt 6 tablespoons of butter over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.
Stir in lemon juice, sherry, and lobster meat. Season with salt and pepper to taste. Cook for 2–3 minutes until lobster is heated through. Stir in parsley and remove from heat.
Transfer the lobster mixture into a greased baking dish or individual ramekins.
In a separate bowl, mix crushed oyster and Ritz crackers. Melt remaining 6 tablespoons of butter and pour over crackers. Stir until well coated.
Evenly spoon the cracker topping over the lobster mixture.
Bake for 12–15 minutes or until topping is golden and casserole is bubbling.
Serve hot, garnished with a bit of extra parsley if desired.
Can be made ahead and baked just before serving.
For added richness, drizzle a little extra melted butter over the top before baking.
Great with a light salad or crusty bread on the side.
