A sweet, tangy, and creamy retro favorite, Lime Jello Salad combines lime gelatin with crushed pineapple, cottage cheese, chopped nuts, and whipped topping for a festive, fluffy dish perfect for holidays and picnics.

Ingredients

  • 1 (3 oz) package lime gelatin
  • 1 cup boiling water
  • 1/2 cup cold water
  • 1 (8 oz) can crushed pineapple, drained
  • 1/2 cup chopped pecans or walnuts
  • 1 cup cottage cheese
  • 1/2 cup mayonnaise (optional)
  • 1 cup whipped topping or whipped cream
  • Maraschino cherries and extra whipped topping for garnish (optional)

Instructions

  1. In a medium bowl, dissolve lime gelatin in boiling water. Stir until completely dissolved.
  2. Add cold water and mix. Allow to cool to room temperature but not set.
  3. Stir in drained pineapple, chopped nuts, cottage cheese, and mayonnaise (if using).
  4. Fold in whipped topping or whipped cream until fully combined.
  5. Pour the mixture into a square dish or gelatin mold and refrigerate for at least 4 hours, or until firm.
  6. Slice and serve chilled. Garnish each slice with a dollop of whipped topping and a maraschino cherry if desired.

Notes

  • Use whipped cream for a richer texture, or whipped topping for convenience.
  • Mayonnaise adds a creamy tang but can be omitted for a sweeter profile.
  • Best served well-chilled and firm.
