Ingredients

Scale

Base Ingredients

  • 1 cup pitted Medjool dates, finely chopped
  • 1/2 cup water

Dairy and Sweeteners

  • 1 cup heavy whipping cream
  • 1/2 cup Greek yogurt
  • 1/4 cup pure honey

Flavorings and Additions

  • 1 tablespoon orange blossom essence
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon sea salt
  • Zest from 1 orange
  • Chopped pistachios for topping (optional)

Instructions

  1. Soften the Dates: Place the finely chopped pitted Medjool dates in a saucepan with 1/2 cup of water. Heat over medium flame, stirring occasionally for about 5 minutes until the dates soften and become plump.
  2. Cool the Dates: Remove the saucepan from heat and allow the softened dates to cool for a few minutes to prevent overheating the next step.
  3. Blend the Base Mixture: Transfer the cooled dates along with any remaining water into a blender or food processor. Add the Greek yogurt, honey, orange blossom essence, vanilla extract, and sea salt. Blend all ingredients until smooth and creamy to form the mousse base.
  4. Whip the Cream: In a separate mixing bowl, whip the heavy whipping cream until it forms soft peaks—this will add lightness and airiness to the mousse.
  5. Fold Cream Into Base: Gently fold the whipped cream into the date mixture, taking care not to deflate the whipped cream, ensuring a light and smooth texture throughout.
  6. Add Orange Zest: Incorporate the orange zest by folding it evenly into the mousse mixture to distribute its fresh citrus flavor.
  7. Chill the Mousse: Spoon the mousse evenly into serving cups or bowls. Cover tightly with plastic wrap and refrigerate for at least 2 hours to allow it to firm up and the flavors to meld.
  8. Serve with Toppings: Just before serving, sprinkle chopped pistachios on top for a delightful crunch and garnish, if desired.

Notes

  • Ensure the dates are pitted before chopping to avoid any hard pieces.
  • Chilling the mousse for at least 2 hours is essential for achieving the best creamy texture.
  • Chopped pistachios are optional but add a nice crunchy texture and visual appeal.
