Marinade Ingredients

  • 1 large orange (juice and zest)
  • 1 lime (juice and zest)
  • 1 tablespoon red wine vinegar
  • 2 tablespoons olive oil
  • 1 teaspoon honey
  • 1 tablespoon soy sauce
  • 1 teaspoon minced garlic
  • 1 jalapeno, minced (for less heat, leave out the seeds)
  • 1 teaspoon salt
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon ground allspice
  • pinch of crushed red pepper
  • 1/4 teaspoon ground black pepper
  • 1/4 teaspoon ground cinnamon

  • 1 1/2 pounds of chicken (any chicken pieces of choice)

Instructions

  1. Prepare the Marinade: In a glass bowl or resealable plastic bag, combine the juice and zest of the orange and lime, red wine vinegar, olive oil, honey, soy sauce, minced garlic, minced jalapeno, salt, ground cumin, dried thyme, ground allspice, crushed red pepper, ground black pepper, and ground cinnamon. Mix thoroughly until all ingredients are well incorporated.
  2. Marinate the Chicken: Add the chicken pieces to the marinade, ensuring they are fully coated. Seal the bowl or bag and place it in the refrigerator. Allow the chicken to marinate for 2 to 3 hours so the flavors fully penetrate the meat.
  3. Bring to Room Temperature: When ready to cook, remove the chicken from the refrigerator and let it sit out for a few minutes to come to room temperature. This step helps in even cooking.
  4. Cook the Chicken: Choose your preferred cooking method: grill the chicken for a smoky flavor, sauté on the stove top for a quick sear, or bake in the oven. Cook each piece until the internal temperature reaches 165°F (74°C) to ensure it is fully cooked and safe to eat.

Notes

  • For less heat, remove the seeds from the jalapeno before mincing.
  • Marinating for longer than 3 hours is possible but avoid exceeding 8 hours to prevent the citrus acids from breaking down the chicken too much.
  • You can use any chicken cuts like breasts, thighs, drumsticks, or even a whole cut-up chicken.
  • If baking, preheat your oven to 375°F (190°C) and bake chicken pieces for about 25–30 minutes or until fully cooked.
  • Serve with fresh salads, rice, or grilled vegetables for a complete meal.
