Ingredients

Crust:

  • 1 cup graham cracker crumbs

Key Lime Filling:

  • 1/2 cup sweetened condensed milk

  • 1/4 cup fresh key lime juice

  • 1 tsp lime zest

  • 1 tsp vanilla extract

Blackberry Coulis:

  • 1/2 cup fresh blackberries

  • 2 tbsp sugar

  • 1 tsp lemon juice

  • Mint leaves

  • Extra coulis drops

  • Optional edible flower petals or freeze-dried berry powder

Instructions

  1. Prepare the crust: Mix graham crumbs, butter, and sugar. Press into the bottom of a springform pan or dessert rings. Chill for 15 minutes.

  2. Make the filling: In a bowl, beat cream cheese until smooth. Add sweetened condensed milk, key lime juice, zest, and vanilla. Blend until silky.

  3. Pour filling over the chilled crust. Smooth the top and refrigerate for at least 4 hours, or overnight for best texture.

  4. Make the coulis: Simmer blackberries, sugar, and lemon juice for 5–7 minutes. Strain to remove seeds. Cool before using.

  5. Decorate the top with coulis drops, mint leaves, and a dusting of freeze-dried berry powder.
