This Keto Lemon Bread is a moist, soft, and tangy low-carb treat perfect for those following a ketogenic lifestyle. Made with almond flour and natural sweeteners, it’s a delightful baked good that combines the fresh zing of lemon with a tender crumb, ideal for breakfast, snack, or dessert.

Ingredients

Scale

Dry Ingredients

  • 2 cups almond flour
  • 1/3 cup granulated sweetener (such as Lakanto for sugar-free)
  • 1 tbsp baking powder
  • 1/2 tsp salt

Wet Ingredients

  • 2/3 cup plain yogurt or coconut cream
  • 1/4 cup lemon juice
  • 3 eggs or flax eggs (for vegan alternative)
  • 1 tbsp lemon zest

Instructions

  1. Prepare Pan and Preheat Oven: Grease a 9×5 loaf pan thoroughly or line it with parchment paper to prevent sticking. Preheat your oven to 325°F (163°C) to ensure an even bake.
  2. Mix Ingredients: In a large bowl, combine the almond flour, granulated sweetener, baking powder, and salt. Whisk together to evenly distribute all dry ingredients. In a separate bowl, whisk the yogurt or coconut cream, lemon juice, eggs or flax eggs, and lemon zest. Then gradually add the wet mixture to the dry ingredients and stir until the batter is smooth and fully mixed.
  3. Pour and Bake: Pour the batter evenly into your prepared loaf pan, smoothing the top as needed. Place in the oven and bake for 50 minutes, or until a toothpick inserted into the center comes out clean.
  4. Cool Properly: Once baked, remove the bread from the oven and let it cool completely in the pan. To prevent the bread from breaking due to its moist and soft texture, gently run a knife around the edges of the loaf before removing it from the pan.
  5. Storage: You can loosely cover the keto lemon bread and keep it at room temperature overnight. For longer storage, refrigerate leftovers for up to 5 days or slice and freeze for up to 2 months, making it easy to enjoy later.

Notes

  • Using lemon zest is crucial as it enhances the lemon flavor significantly.
  • You can substitute yogurt with coconut cream for a dairy-free version.
  • Flax eggs serve as a vegan substitute for regular eggs if needed.
  • Ensure the bread cools completely before removal to maintain the loaf’s structure.
  • Sweetener choice can affect sweetness level; choose one that fits your taste and keto requirements.
