Dry Ingredients

  • 1.25 cup Almond Flour
  • 1/4 cup Coconut Flour
  • 1 teaspoon Baking Powder
  • 1/3 cup Brown Erythritol
  • 1 teaspoon Cinnamon Powder

Wet Ingredients

  • 1/4 cup Butter, melted
  • 3 Eggs
  • 1 teaspoon Vanilla Extract

Instructions

  1. Pre-heat oven. Pre-heat oven to 350F. Line a loaf pan with parchment.
  2. Mix cinnamon sugar. Stir together brown erythritol and cinnamon powder in a bowl. Set aside.
  3. Prepare wet mix. Whisk together eggs, butter, and vanilla in a bowl.
  4. Add dry flours. Blend in almond flour, coconut flour, and baking powder.
  5. Fold in cinnamon sugar. Add the cinnamon sugar and swirl in gently with a spatula.
  6. Transfer to pan. Pour the mixture into the prepared pan. Optionally top with more cinnamon sugar.
  7. Bake. Bake for 30 minutes.
