Creamy, cheesy, and ultra-satisfying, this Keto Cheesy Broccoli Casserole features tender broccoli baked in a rich cream cheese and ranch base, topped with bubbling cheddar for the ultimate low-carb comfort food.

  • 2 1/2 cups fresh broccoli florets
  • 8 oz cream cheese, softened
  • 1/4 cup ranch dressing
  • 1 1/4 cups shredded cheddar cheese, divided
  • 1/2 cup water
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C) and lightly grease a baking dish.
  2. Steam or microwave broccoli until just tender, about 3–4 minutes. Drain and set aside.
  3. In a saucepan over medium-low heat, combine cream cheese, ranch dressing, and water. Stir until melted and smooth.
  4. Add 1 cup of the shredded cheddar and stir until fully melted into the sauce.
  5. Season the sauce with salt and pepper to taste.
  6. In the prepared baking dish, combine broccoli and cheese sauce, mixing gently to coat.
  7. Top evenly with remaining 1/4 cup of cheddar cheese.
  8. Bake for 18–20 minutes, or until bubbly and golden on top.
  9. Let rest for a few minutes before serving.
