This Keto Cauliflower Mac and Cheese is a rich, cheesy, low-carb twist on the classic comfort food, featuring tender cauliflower florets smothered in a creamy cheese sauce and topped with crispy bacon for the perfect indulgent bite.

Ingredients

  • 1 large head cauliflower, cut into florets
  • 1 cup shredded cheddar cheese
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 3 oz cream cheese
  • 1 cup heavy whipping cream
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and pepper to taste
  • Crumbled bacon (for garnish)

Instructions

  1. Preheat oven to 375°F (190°C) and lightly grease a baking dish.
  2. Steam or boil cauliflower florets until tender but not mushy (about 6–8 minutes). Drain well and set aside.
  3. In a saucepan over medium heat, combine heavy cream and cream cheese. Stir until melted and smooth.
  4. Add garlic powder, onion powder, salt, and pepper.
  5. Stir in cheddar, mozzarella, and Parmesan cheeses until melted and sauce is creamy.
  6. Fold in cauliflower florets until evenly coated with cheese sauce.
  7. Transfer to the baking dish and bake for 15–20 minutes until bubbly and lightly golden on top.
  8. Garnish with crumbled bacon before serving.

Notes

  • Drain cauliflower thoroughly to avoid a watery casserole.
  • For a spicier version, add a pinch of cayenne or chopped jalapeños.
  • Use pre-cooked bacon for quick prep.
