These Juicy Mini Beef Cheeseburger Sliders are perfect for game day gatherings, featuring flavorful ground beef cooked with sautéed onions and garlic, layered with cheese on soft rolls, and baked to perfection with a buttery garlic glaze and sesame seeds for a deliciously savory treat.

Ingredients

Scale

Beef Mixture

  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 lb ground beef
  • 2 tbsp mayonnaise

Assembly

  • 1 block of slider rolls (approx. 12 count)
  • 6 slices cheddar cheese (halved for layering)
  • 1 cup shredded cheddar cheese

Garlic Butter Glaze

  • 3 tbsp butter, melted
  • 1 tsp garlic powder (or 1 clove fresh garlic, minced)
  • 1 tbsp sesame seeds

Instructions

  1. Prep the Meat: In a skillet over medium heat, sauté the chopped onions and minced garlic until soft and fragrant. Add the ground beef and cook until fully browned, breaking it up as it cooks. Drain any excess grease, remove from heat, and stir in the mayonnaise until well combined.
  2. Slice & Layer: Using a long serrated knife, carefully slice the entire block of slider rolls horizontally in half, keeping the halves connected. Place the bottom half in a large baking dish to form the base layer.
  3. Build the Sliders: Layer the halved cheddar slices evenly over the bottom buns to create a moisture barrier. Spread the cooked beef mixture on top of the cheese layer, then sprinkle the shredded cheddar cheese evenly over the beef. Place the top half of the rolls back onto the assembled sliders.
  4. Glaze & Bake: In a small bowl, mix the melted butter with garlic powder or minced garlic. Brush this mixture evenly over the top buns, then sprinkle the sesame seeds on top. Cover the baking dish with aluminum foil.
  5. Bake: Preheat the oven to 350°F (175°C). Bake the covered sliders for 10-15 minutes to warm and meld the flavors. Remove the foil and bake uncovered for an additional 5 minutes to brown and crisp the tops of the buns.

Notes

  • To prevent soggy buns, layering cheese beneath the meat mixture creates a barrier that absorbs excess juices.
  • Serve with a side of In-N-Out style spread made from mayonnaise, ketchup, mustard, and relish for a delicious dipping sauce.
  • For large batches, press raw beef into a rimmed baking sheet and bake as one solid patty at 350°F for 20 minutes before assembling sliders.
