A traditional Irish potato pancake, crispy on the outside and tender on the inside, made with both grated and mashed potatoes for the perfect texture. Serve it as a delicious side or a hearty breakfast treat!

Ingredients

  • 2 cups raw potatoes, grated
  • 1 cup mashed potatoes
  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 cup whole milk
  • 1 egg, beaten
  • 2 tbsp green onions, chopped (optional)
  • 2 tbsp butter, for frying

 

  • 2 tbsp vegetable oil, for frying

Instructions

  1. Prepare the Potatoes:

    • Grate the raw potatoes and squeeze out excess moisture using a clean kitchen towel.
  2. Mix the Batter:

    • In a large bowl, combine grated potatoes, mashed potatoes, flour, baking powder, salt, and pepper.
    • Stir in milk, beaten egg, and green onions (if using) until a thick batter forms.
  3. Cook the Boxty:

    • Heat butter and vegetable oil in a skillet over medium heat.
    • Scoop ¼ cup of batter per pancake into the skillet, flattening slightly with a spatula.
  4. Fry Until Golden:

    • Cook for 3-4 minutes per side, or until golden brown and crispy.
    • Repeat with remaining batter, adding more butter if needed.
  5. Serve & Enjoy:

    • Serve warm with sour cream, chives, or as a side to a hearty Irish breakfast.

Notes

  • For Extra Crispiness: Make sure to remove as much moisture as possible from the grated potatoes before mixing.
