Ingredients

For the Crepe Batter:

  • 2 large eggs

  • 1 cup all-purpose flour

  • 1 1/2 cups milk

  • 2 tablespoons melted butter

For the Cinnamon Sugar Filling:

  • 1/4 cup butter, softened

  • 1/3 cup brown sugar

  • 1 tablespoon ground cinnamon

For the Cream Cheese Frosting:

  • 4 oz cream cheese, softened

  • 1/4 cup powdered sugar

  • 1-2 tablespoons milk (to desired consistency)

  • 1/2 teaspoon vanilla extract

Toppings:

  • Fresh strawberries, sliced

  • Powdered sugar (for dusting)

Instructions

  1. Make the crepes: In a mixing bowl or blender, combine eggs, flour, milk, and melted butter until smooth. Let batter rest for 10–15 minutes.

  2. Heat a nonstick skillet over medium heat. Lightly grease with butter. Pour about 1/4 cup of batter and swirl to coat the pan. Cook 1–2 minutes per side until lightly golden. Repeat with remaining batter.

  3. Prepare cinnamon filling: Mix softened butter, brown sugar, and cinnamon until smooth and spreadable.

  4. Make cream cheese frosting: Beat cream cheese, powdered sugar, vanilla, and enough milk to reach desired consistency.

  5. Assemble crepes: Spread a thin layer of cinnamon filling down the center of each crepe. Roll up or fold into quarters.

  6. Drizzle with cream cheese frosting, top with sliced strawberries, and dust with powdered sugar.

  7. Serve warm and enjoy!

Notes

  • For extra indulgence, warm the cinnamon filling slightly before spreading.

  • Make crepes ahead and reheat gently before serving.

  • Add a scoop of vanilla ice cream for a dessert twist.
