  • For the huevos rancheros:
  • 2 corn tortillas
  • 2 large eggs
  • 1/2 cup ground chorizo
  • 1/4 cup crumbled queso fresco
  • 1/4 cup cilantro, chopped
  • 1 lime, cut into wedges
  • 1 tablespoon vegetable oil (for frying tortillas)
  • For the tomato sauce:
  • 2 ripe tomatoes, chopped
  • 1/2 small onion, chopped
  • 1 clove garlic, minced
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon cumin
  • Salt and pepper to taste
  • 1 tablespoon olive oil

Instructions

  1. Prepare the tomato sauce: In a medium saucepan, heat olive oil over medium heat. Add the chopped onion and garlic, and sauté for 2-3 minutes until softened.
  2. Add the chopped tomatoes, chili powder, cumin, salt, and pepper. Stir and let simmer for 10-12 minutes, until the tomatoes break down into a sauce.
  3. Cook the chorizo: In a separate skillet, cook the ground chorizo over medium heat for 5-7 minutes until browned and cooked through. Set aside.
  4. Fry the tortillas: Heat vegetable oil in a skillet over medium-high heat. Fry the tortillas for about 1-2 minutes per side until crispy and golden brown. Remove and drain on paper towels.
  5. Cook the eggs: In the same skillet, cook the eggs sunny-side up or to your preferred doneness. Season with a little salt and pepper.
  6. Assemble the dish: Place a fried tortilla on each plate, spoon the tomato sauce over the tortilla, and top with the cooked chorizo. Add the fried eggs on top, followed by crumbled queso fresco, fresh cilantro, and lime wedges.
  7. Serve hot and enjoy!

Notes

  • If you prefer a spicier kick, feel free to add extra chili powder or a dash of hot sauce to the tomato sauce.
  • For a more filling dish, you can add some avocado slices or black beans on top.
