Ingredients
Scale
Chicken
2 chicken breasts
Glaze
1 tbsp olive oil
1 tbsp honey
1 tsp Dijon mustard
½ tsp garlic powder
½ tsp thyme
½ tsp rosemary
Salt + pepper to taste
Instructions
Preheat Oven: Preheat your oven to 400°F (205°C) to ensure it’s hot and ready for baking the chicken.
Prepare Glaze: In a bowl, mix together the honey, Dijon mustard, olive oil, garlic powder, thyme, and rosemary until well combined.
Coat Chicken: Completely coat the chicken breasts with the honey-herb glaze, making sure every part is covered for maximum flavor.
Bake Chicken: Place the coated chicken breasts on a baking tray and bake in the preheated oven for 20–22 minutes. Halfway through baking, brush more glaze over the chicken to build up a glossy, flavorful coating.
Rest Chicken: Remove the chicken from the oven and let it rest for 5 minutes so the juices redistribute, ensuring moist and juicy meat.
Optional Broil: For extra caramelization, broil the chicken for the last 2 minutes of cooking if desired.
Serve: Slice and serve the honey & herb roasted chicken breasts as a main dish or add to salads and bowls.
Notes
Ensure the internal temperature of the chicken reaches 165°F (74°C) for safe consumption.
Add 1 tsp lemon juice to the glaze for added brightness if desired.
If you have a mustard allergy, omit the Dijon mustard and add ½ tsp lemon juice instead.
Store cooked chicken in the refrigerator for 3–4 days.
This dish is great for meal prep and can be sliced into salads or bowls.
