Ingredients

Scale

Chicken

  • 2 chicken breasts

Glaze

  • 1 tbsp olive oil
  • 1 tbsp honey
  • 1 tsp Dijon mustard
  • ½ tsp garlic powder
  • ½ tsp thyme
  • ½ tsp rosemary
  • Salt + pepper to taste

Instructions

  1. Preheat Oven: Preheat your oven to 400°F (205°C) to ensure it’s hot and ready for baking the chicken.
  2. Prepare Glaze: In a bowl, mix together the honey, Dijon mustard, olive oil, garlic powder, thyme, and rosemary until well combined.
  3. Coat Chicken: Completely coat the chicken breasts with the honey-herb glaze, making sure every part is covered for maximum flavor.
  4. Bake Chicken: Place the coated chicken breasts on a baking tray and bake in the preheated oven for 20–22 minutes. Halfway through baking, brush more glaze over the chicken to build up a glossy, flavorful coating.
  5. Rest Chicken: Remove the chicken from the oven and let it rest for 5 minutes so the juices redistribute, ensuring moist and juicy meat.
  6. Optional Broil: For extra caramelization, broil the chicken for the last 2 minutes of cooking if desired.
  7. Serve: Slice and serve the honey & herb roasted chicken breasts as a main dish or add to salads and bowls.

Notes

  • Ensure the internal temperature of the chicken reaches 165°F (74°C) for safe consumption.
  • Add 1 tsp lemon juice to the glaze for added brightness if desired.
  • If you have a mustard allergy, omit the Dijon mustard and add ½ tsp lemon juice instead.
  • Store cooked chicken in the refrigerator for 3–4 days.
  • This dish is great for meal prep and can be sliced into salads or bowls.
