These Homemade Cloud Eggs are a light and fluffy breakfast treat made by whipping egg whites into airy clouds and baking them with a golden runny yolk center, perfect for a healthy and impressive brunch.

  • 2 large eggs
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons grated Parmesan cheese (optional)
  • 1 tablespoon chopped chives or parsley
  • Toasted bread for serving

Instructions

  1. Preheat the Oven Preheat oven to 220°C / 425°F. Line a baking sheet with parchment paper.
  2. Separate the Eggs Carefully separate the egg whites from the yolks. Place whites in a mixing bowl and keep yolks aside in small bowls.
  3. Whip the Egg Whites Add salt and pepper to the egg whites. Beat using a hand mixer or whisk until stiff peaks form. Gently fold in Parmesan cheese and herbs if using.
  4. Form the Clouds Spoon whipped egg whites onto the baking sheet into two mound shapes. Use the back of a spoon to create a small well in the center of each mound.
  5. Bake the Egg Whites Bake for 3 minutes until slightly golden.
  6. Add the Yolks Carefully place an egg yolk into the center of each cloud. Return to the oven and bake for 2–3 minutes until the yolk is just set.
  7. Serve Carefully transfer cloud eggs onto toasted bread. Garnish with extra herbs and black pepper.

  • Whipping the egg whites properly is key to achieving fluffy clouds.
  • Add crispy bacon bits or smoked salmon for extra flavor.
  • Serve immediately while the yolk is still runny.
