Ingredients
UnitsScale
1cup basmati rice, rinsed
2 tbsp butter
3 garlic cloves, sliced
1 1/2cups water or broth
Salt & pepper to taste
2 tbsp chopped cilantro or parsley
2 chicken breasts, sliced
1 tbsp oil
1/2cup cream
1 garlic clove, minced
1 tsp chili flakes
Salt & pepper to taste
Chopped herbs for garnish
Cherry tomatoes, halved
Cucumber slices
Lime wedges
Instructions
In a pot, melt butter and sauté sliced garlic until golden and fragrant.
Add rinsed basmati rice and stir to coat in the garlic butter.
Pour in water or broth, season with salt and pepper, bring to a boil, then reduce heat and cover. Cook for 12–15 minutes until rice is fluffy and liquid is absorbed.
Once cooked, fluff rice with a fork and stir in chopped herbs.
In a skillet, heat oil over medium-high heat and sear the sliced chicken breasts until browned and cooked through.
Add cream, minced garlic, chili flakes, salt, and pepper to the pan. Simmer for 3–4 minutes until sauce is thickened and creamy.
Plate the herbed butter rice with creamy chicken on the side. Add cherry tomatoes, cucumber slices, and lime wedges.
Garnish with additional fresh herbs and serve warm.
Notes
Use chicken thighs for extra juiciness if preferred.
For a lighter version, use half-and-half or milk instead of cream.
Adjust chili flakes based on your spice preference.
