Whole wheat sandwich bread (soft, square slices)
Whipped cream cheese (plain or herb-flavored)
1 cucumber, thinly sliced
1 roasted red pepper, sliced into strips
Fresh parsley or dill (optional, for garnish)
Heart-shaped cookie cutter
Instructions
Use a heart-shaped cookie cutter to cut each slice of bread into heart shapes. You’ll need two hearts per sandwich.
Spread a generous layer of whipped cream cheese on one side of each heart slice.
On half of the heart slices, layer a couple of cucumber slices and strips of roasted red pepper over the cream cheese.
Top with the remaining heart-shaped bread slices, cream cheese side facing in, to form sandwiches.
Gently press the sandwiches together.
Arrange the sandwiches on a platter and garnish with fresh parsley or dill.
Serve chilled as an elegant appetizer or snack.
Notes
You can prepare the sandwiches a few hours ahead and store them covered in the refrigerator.
Use flavored cream cheese for added taste variety.
