This Healthy Pistachio Nut Butter is a naturally creamy, ultra-smooth spread made from just roasted pistachios, a touch of coconut oil, and a pinch of salt. Rich in healthy fats and plant-based protein, it’s the perfect wholesome addition to toast, oats, smoothies, or straight off the spoon.

Ingredients

  • 16 oz roasted unsalted pistachios (shelled)

  • 1/2 tsp coconut oil (optional, for extra creaminess)

  • Pinch of salt (to taste)

Instructions

  1. Blend Pistachios:
    Add pistachios to a high-speed blender or food processor.

  2. Process Until Smooth:
    Blend for 1–2 minutes, scraping down the sides as needed. The nuts will go from a coarse meal to a thick paste, then become a smooth butter.

  3. Add Oil & Salt:
    Once smooth and creamy, add coconut oil and a pinch of salt. Blend again until fully incorporated and silky.

  4. Taste & Adjust:
    Taste and adjust salt if desired.

  5. Store:
    Transfer to a clean glass jar and refrigerate. Use within 2–3 weeks.

Notes

  • For a naturally sweeter flavor, add 1–2 Medjool dates during blending.

  • Use salted pistachios if you prefer a saltier spread—just omit added salt.

  • Great for drizzling over fruit, toast, yogurt bowls, or mixing into batters.
