  • 2 halibut fillets
  • 2 tbsp olive oil
  • 2 garlic cloves, minced
  • 1 tsp lemon peel (zest)
  • 1/4 tsp ground black pepper
  • 1/2 tsp kosher salt
  • 1/2 tsp smoked paprika
  • 1/2 tsp ground cumin

Instructions

  1. Preheat grill or grill pan to medium-high heat.
  2. Pat halibut fillets dry with paper towels.
  3. In a small bowl, mix olive oil, minced garlic, lemon zest, pepper, salt, paprika, and cumin.
  4. Brush the seasoning mixture evenly over both sides of the halibut.
  5. Place fillets on the hot grill and cook for about 4–5 minutes per side, or until the fish is opaque and flakes easily with a fork.
