A warm, comforting crumble featuring juicy mixed berries topped with a crunchy hazelnut streusel. The perfect balance of sweet, tart, and nutty flavors with creamy vanilla custard on the side.

Ingredients

  • 450 g mixed berries
  • 40 ml 20% cream
  • Sugar, to taste
  • 40 g finely chopped roasted hazelnuts or hazelnut flour
  • 40 g all-purpose flour
  • 40 g brown sugar
  • 40 g unsalted butter, room temperature
  • Zest of 1/2 orange (juice not needed)
  • 30 g hazelnuts, coarsely chopped
  • 125 ml milk
  • 125 ml 20% cream
  • Seeds of 1/2 vanilla pod
  • 2 egg yolks (grade C1)
  • 20 g powdered sugar

Instructions

  1. Preheat oven to 180°C (350°F).
  2. In a bowl, toss berries with sugar to taste and place in a baking dish.
  3. Mix hazelnut flour, flour, brown sugar, butter, and orange zest until crumbly. Sprinkle over berries.
  4. Bake for 30-35 minutes, until the topping is golden and berries are bubbling.
  5. Meanwhile, heat milk, cream, and vanilla seeds in a saucepan until just simmering.
  6. Whisk egg yolks and powdered sugar together.
  7. Slowly pour warm milk mixture into yolks, whisking constantly.
  8. Return mixture to the pan and gently cook, stirring, until thickened to custard consistency. Cool slightly.
  9. Serve the crumble warm with vanilla custard on the side.

  • Adjust sugar in berries to taste depending on their natural sweetness.
  • Hazelnut flour can be replaced with finely ground roasted hazelnuts.
  • Watch the custard closely to avoid curdling—low heat and constant stirring are key.
  • Custard can be made ahead and chilled, then gently rewarmed for serving.
