Ingredients

  • 1 pound (450g) large shrimp, peeled and deveined

  • 1 red bell pepper, cut into chunks

  • 1 green bell pepper, cut into chunks

  • 1 yellow bell pepper, cut into chunks

  • 1 large onion, cut into chunks

  • 2 tablespoons olive oil

  • 2 tablespoons lemon juice

  • 3 cloves garlic, minced

  • 1 teaspoon smoked paprika

  • 1/2 teaspoon cayenne pepper (optional)

  • 1 teaspoon salt

  • 1/2 teaspoon black pepper

  • Wooden or metal skewers

Instructions

  1. In a large bowl, whisk together the olive oil, lemon juice, minced garlic, smoked paprika, cayenne pepper (if using), salt, and black pepper.

  2. Add the shrimp and toss to coat well. Marinate for 20-30 minutes in the refrigerator.

  3. Preheat your grill or grill pan to medium-high heat.

  4. Thread shrimp, bell peppers, and onion chunks alternately onto the skewers.

  5. Grill the kabobs for about 2-3 minutes per side, until the shrimp are pink, opaque, and slightly charred.

  6. Serve hot with a squeeze of fresh lemon juice or your favorite dipping sauce.
