This Grilled Breakfast Tortilla Wrap is a quick and hearty handheld meal, filled with creamy avocado, fluffy scrambled eggs, shredded cheese, and zesty salsa—all folded into a tortilla and grilled to golden perfection for a crispy, melty breakfast bite.

Ingredients

  • 1 large flour tortilla
  • 2 large eggs
  • 1/4 avocado, mashed
  • 1/4 cup shredded mozzarella cheese
  • 2 tbsp salsa (with or without ground meat)
  • 1 tsp butter or olive oil (for scrambling eggs)
  • Salt and pepper to taste
  • Butter or spray oil for grilling

Instructions

  1. In a small skillet, melt butter over medium heat. Scramble eggs until just cooked and fluffy. Season with salt and pepper.
  2. Lay the tortilla flat and slice from the center down to the edge (to help with folding).
  3. Mentally divide the tortilla into four quadrants: Bottom left: shredded mozzarella, Bottom right: scrambled eggs, Top right: mashed avocado, Top left: salsa.
  4. Fold the tortilla up and over each section in a clockwise motion, creating a layered triangle wrap.
  5. Heat a grill pan or skillet over medium heat and lightly butter or spray.
  6. Grill the folded wrap for 2–3 minutes per side until golden brown and crispy.
  7. Slice and serve warm.
