Ingredients

For the Sugar Cookies:

  • 2 3/4 cups all-purpose flour

  • 1 tsp baking powder

  • 1/2 tsp salt

  • 1 cup unsalted butter, softened

  • 1 cup granulated sugar

  • 1 egg

  • 1 tsp vanilla extract

  • 1/2 tsp almond extract (optional)

For the Royal Icing:

  • 3 cups powdered sugar

  • 2 tbsp meringue powder

  • 5 tbsp warm water (adjust as needed)

  • Gel food coloring (purple, teal, pink, etc.)

  • Edible gold dust or luster dust

  • Fine sanding sugar or clear sparkling sugar

Instructions

  1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.

  2. Whisk flour, baking powder, and salt in a medium bowl. Set aside.

  3. In a large bowl, cream butter and sugar until light and fluffy. Beat in egg, vanilla, and almond extract.

  4. Gradually add the dry ingredients to form a dough. Divide in half, wrap, and chill for 30 minutes.

  5. Roll dough to ¼-inch thickness on a floured surface. Cut into oval or gem-like shapes.

  6. Bake for 8–10 minutes or until edges are lightly golden. Cool completely.

To Decorate:
7. Prepare royal icing by beating powdered sugar, meringue powder, and water to stiff peaks.
8. Divide and tint icing with gel food coloring.
9. Pipe layered, irregular rings onto cookies to mimic geode interiors. Use a fine brush to blend colors for a natural effect.
10. While icing is wet, sprinkle the center with sanding sugar for a crystal-like texture.
11. Once dry, add edible gold accents around the edges.
12. Let cookies dry uncovered for 8 hours or overnight before stacking or packaging.
