Smoky and flavorful garlic herb butter grilled oysters are the ultimate seafood appetizer. Topped with a rich blend of garlic, herbs, and butter, then grilled to perfection, these oysters are an easy gourmet dish perfect for summer grilling or special occasions.

Ingredients

  • 12 fresh oysters, scrubbed clean

  • 1/2 cup unsalted butter, softened

  • 3 cloves garlic, minced

  • 2 tbsp fresh parsley, finely chopped

  • 1 tbsp fresh chives, chopped

  • 1 tsp lemon zest

  • 1 tbsp lemon juice

  • 1/4 tsp crushed red pepper flakes (optional)

  • Salt and black pepper, to taste

  • Lemon wedges, for serving

Instructions

  1. Preheat grill to medium-high heat.

  2. In a bowl, mix softened butter with garlic, parsley, chives, lemon zest, lemon juice, red pepper flakes, salt, and pepper until well combined.

  3. Carefully shuck the oysters, keeping them in the half shell.

  4. Spoon about 1 teaspoon of the garlic herb butter onto each oyster.

  5. Place the oysters directly on the grill, shell side down. Grill for 5–7 minutes, or until the butter is bubbling and the oysters are cooked through.

  6. Remove from grill and serve immediately with lemon wedges.

Notes

  • If you’re not confident with shucking oysters, many seafood markets will do it for you upon request.

  • Add a splash of hot sauce or grated Parmesan cheese for a flavorful twist.

  • Use hardwood chips on charcoal for added smoky flavor.
