  • For the chicken:
  • 1 whole chicken (about 45 lbs)
  • 1/2 cup unsalted butter, melted
  • 6 cloves garlic, minced
  • 1 lemon, halved
  • 2 tablespoons fresh thyme (or rosemary)
  • 1 onion, quartered
  • 2 tablespoons olive oil
  • Salt and freshly ground black pepper to taste
  • For basting:
  • 1/4 cup chicken broth or white wine (optional)

Instructions

  1. Preheat the oven: Preheat your oven to 425°F (220°C).
  2. Prepare the chicken: Pat the chicken dry with paper towels. Place it in a large cast-iron skillet or roasting pan.
  3. Prepare the garlic butter: In a small bowl, mix the melted butter with minced garlic, salt, pepper, and fresh thyme or rosemary.
  4. Season the chicken: Rub the garlic butter mixture generously all over the chicken, including under the skin if possible. Stuff the chicken cavity with lemon halves and a few sprigs of thyme or rosemary.
  5. Prepare the vegetables: Place the quartered onion in the skillet around the chicken. This will infuse the chicken with extra flavor as it roasts. Optionally, pour a little chicken broth or wine into the skillet for added moisture during roasting.
  6. Roast the chicken: Place the chicken in the preheated oven. Roast for 1 hour to 1 hour 20 minutes, or until the internal temperature reaches 165°F (75°C) in the thickest part of the thigh.
  7. Baste the chicken: During roasting, baste the chicken every 20-30 minutes with the pan juices to ensure a juicy, golden skin.
  8. Rest the chicken: Once done, remove the chicken from the oven and let it rest for 10-15 minutes before carving. This helps keep the juices inside the meat.
  9. Serve: Carve the chicken and serve with the roasted onions and extra garlic butter drizzled over the top.
