Tender cauliflower florets roasted to golden perfection in a rich garlic butter and olive oil blend, finished with lemon juice and a hint of smoky paprika for the perfect savory side.

Ingredients

  • 1 medium head cauliflower, cut into florets
  • 4 cloves garlic, minced
  • 2 tbsp butter, melted
  • 3 tbsp olive oil
  • 1/2 lemon, juiced
  • 1/2 tsp smoked paprika
  • 1/2 tsp red pepper flakes
  • 1/2 tsp black pepper
  • 1 tsp salt

Instructions

  1. Preheat oven to 425°F (220°C). Line a large baking sheet with parchment paper.
  2. In a large mixing bowl, combine melted butter, olive oil, minced garlic, lemon juice, smoked paprika, red pepper flakes, salt, and black pepper.
  3. Add the cauliflower florets and toss until evenly coated with the garlic butter mixture.
  4. Spread the cauliflower in a single layer on the baking sheet.
  5. Roast for 25–30 minutes, flipping once halfway through, until the florets are golden brown and tender with crispy edges.
  6. Serve hot, garnished with extra herbs or a sprinkle of parmesan if desired.

Notes

  • For a dairy-free version, replace butter with additional olive oil.
  • Parmesan cheese or chopped parsley makes a great garnish.
  • Try adding a pinch of cumin or curry powder for variation.
