Ingredients

Scale

For the Cereal Mixture

  • 4 cups Fruity Pebbles Cereal
  • 2 cups mini marshmallows
  • 2 tablespoons unsalted butter

For the Wrap

  • 2 sheets Fruit Roll-Ups

For the Filling

  • 2 medium bananas

For Serving (Optional)

  • Chocolate syrup, to taste

Instructions

  1. Melt Butter: In a pot over medium heat, melt the unsalted butter until it’s completely liquid.
  2. Incorporate Marshmallows: Stir the mini marshmallows into the melted butter, mixing continuously until they melt completely to form a smooth, gooey base.
  3. Add Cereal: Remove the pot from heat and quickly stir in the Fruity Pebbles cereal, ensuring all pieces are coated.
  4. Cool Mixture: Spread the cereal mixture onto a parchment-lined surface and let it cool slightly until it is manageable to shape.
  5. Prepare Wraps: Lay the fruit roll-up sheets flat on your workspace to use as the outer layer.
  6. Shape Rectangle: Mold the cooled cereal mixture into a rectangle about half an inch thick on the fruit roll-ups.
  7. Add Banana and Roll: Place a peeled banana at one end of the rectangle and roll it up tightly, encasing the banana inside the cereal mixture and fruit roll-up.
  8. Repeat: Repeat the rolling process with the remaining cereal mixture and bananas to form multiple sushi rolls.
  9. Cut Sushi Rolls: Cut each rolled log into sushi-sized pieces, typically about 1–1.5 inches thick.
  10. Serve: Drizzle chocolate syrup over the sushi pieces before serving to add extra sweetness and decoration.

Notes

  • Feel free to use different cereals for a variation in flavor and texture.
  • Alternative fruit roll-up brands or other fruit leathers can be substituted as desired.
  • Other fruits like strawberries or kiwi can be used instead of bananas for different flavor profiles.
  • Ensure to work quickly after marshmallow mixture is off the heat as it will harden as it cools.
  • Use parchment paper to prevent sticking and to help shape the cereal mixture easily.
