Freakin’ Fantastic Fried Rice Ingredients

  • 4 cups leftover cooked rice (preferably day-old rice)
  • 3 large eggs, whisked
  • 3 tablespoons soy sauce (adjust to taste)
  • 2 tablespoons vegetable oil or sesame oil
  • 2 cups mixed vegetables (peas, carrots, corn, etc.)
  • 2 cloves garlic, minced (optional)
  • 1 inch ginger, minced (optional)
  • 2 stalks green onions, sliced (optional, for garnish)

Equipment

  • Skillet
  • Spatula
  • Whisk

Instructions

  1. Prepare the Rice: If you are not using leftover rice, cook fresh rice and let it cool completely. Using cooled, day-old rice helps prevent the fried rice from becoming mushy.
  2. Scramble the Eggs: Whisk the eggs with a splash of soy sauce. Heat a hot pan with oil and scramble the eggs until cooked. Remove from the pan, chop roughly, and set aside.
  3. Sauté Aromatics and Vegetables: Heat vegetable or sesame oil in the skillet. Add minced garlic and ginger (if using) and stir-fry for about 30 seconds until fragrant. Then add the mixed vegetables and cook until they are tender-crisp.
  4. Cook the Rice: Add the cooled cooked rice to the skillet with the vegetables. Break up any clumps with your spatula and stir-fry for a few minutes until the rice is heated through.
  5. Combine Ingredients: Add the chopped scrambled eggs and soy sauce to the rice and vegetable mixture. Toss everything together so that all ingredients are evenly combined.
  6. Final Stir-Fry: Continue to stir-fry the mixture for another 2-3 minutes until everything is thoroughly heated and fragrant.
  7. Serve: Garnish with sliced green onions if desired, then serve hot for a delicious and satisfying meal.

Notes

  • Use day-old rice for best texture and to avoid mushy fried rice.
  • Feel free to customize the mixed vegetables based on what you have available.
  • Adjust the soy sauce quantity according to your taste preference and salt tolerance.
  • For extra flavor, you can add a dash of sesame oil at the end of cooking.
  • Garnish with sliced green onions to add freshness and color to the dish.
