A light, citrusy cake bursting with lemon-lime flavors, infused with Mountain Dew, and topped with a sweet glaze and whipped cream. This fun and refreshing dessert is perfect for any occasion!

Ingredients

For the Cake:
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, softened
  • 1 3/4 cups granulated sugar
  • 4 large eggs
  • 1/2 cup sour cream
  • 1 cup Mountain Dew
  • 1 teaspoon lemon zest
  • 1 teaspoon lime zest
  • 1 teaspoon vanilla extract
For the Glaze:
  • 1 cup powdered sugar
  • 2 tablespoons Mountain Dew
  • 1/2 teaspoon lemon juice
  • Green food coloring (optional)
For the Topping:

 

  • 1 cup whipped cream
  • 1/4 cup pineapple chunks
  • 2 tablespoons maraschino cherries, chopped

Instructions

  • Preheat oven to 350°F (175°C) and grease a round cake pan.
  • In a bowl, whisk together flour, baking powder, baking soda, and salt.
  • In a separate bowl, beat butter and sugar until light and fluffy.
  • Add eggs one at a time, mixing well after each. Stir in sour cream, vanilla, lemon zest, and lime zest.
  • Alternately add dry ingredients and Mountain Dew, mixing until combined.
  • Pour batter into the pan and bake for 35-40 minutes, or until a toothpick inserted in the center comes out clean.
  • Let the cake cool completely.
  • Mix glaze ingredients and drizzle over the cake.

 

  • Pipe whipped cream on top and garnish with pineapple chunks and maraschino cherries.

Notes

  • For an extra citrus kick, add more lemon and lime zest to the batter.
  • Green food coloring can enhance the vibrant Mountain Dew theme.

 

  • Serve chilled for a refreshing twist!
