Soft, airy low-carb bread rolls made with almond flour and psyllium husk powder, topped with a variety of seeds. Ideal for a healthy, gluten-free, and keto-friendly breakfast or snack.

Ingredients

  • 1 cup almond flour
  • 1/4 cup psyllium husk powder
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 3 egg whites
  • 1 tsp apple cider vinegar
  • 3/4 cup hot water
  • Mixed seeds for topping (pumpkin seeds, sesame seeds, sunflower seeds, black sesame)

Instructions

  1. Preheat the oven to 350°F (180°C). Line a baking sheet with parchment paper.
  2. In a mixing bowl, whisk together almond flour, psyllium husk powder, baking powder, and salt.
  3. Add egg whites and apple cider vinegar, stirring to combine.
  4. Slowly add the hot water while mixing, until a dough forms. Let it rest for 5 minutes to thicken.
  5. Divide the dough into 4–6 equal portions and shape into round rolls.
  6. Moisten the tops with a little water and press the mixed seeds gently into the surface.
  7. Place on the baking sheet and bake for 45–50 minutes, or until golden and firm.
  8. Allow to cool slightly before serving.

Notes

  • Ensure psyllium husk powder is finely ground for best texture.
  • Use hot, not boiling water, to activate the psyllium properly.
  • Rolls can be stored in an airtight container for up to 3 days or frozen for longer storage.
  • Great as sandwich buns or served with spreads and dips.
