  • 150 g unsalted butter, softened
  • 100 g sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1/2 tsp baking powder
  • 1/4 tsp salt

Instructions

  1. Preheat the oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. Cream together the butter and sugar until light and fluffy.
  3. Beat in the egg and vanilla extract until well combined.
  4. In a separate bowl, whisk together flour, cocoa powder, baking powder, and salt.
  5. Gradually mix the dry ingredients into the wet mixture until a dough forms.
  6. Roll out the dough on a lightly floured surface to about 1/4 inch thickness.
  7. Use cookie cutters or an embossed rolling pin to cut or imprint festive shapes.
  8. Place cookies on prepared baking sheets and bake for 10-12 minutes until set but still soft in the center.
  9. Cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

  • For deeper flavor, use high-quality unsweetened cocoa powder.
  • Dough can be chilled for 30 minutes if too soft to roll.
  • Decorate with royal icing or powdered sugar if desired.
  • Perfect for gifting—store in airtight tins with parchment between layers.
