Instructions

  1. Roast the Sweet PotatoesPreheat oven to 200°C / 400°F. Toss diced sweet potatoes with olive oil, paprika, garlic powder, salt, and pepper. Spread evenly on a baking sheet. Roast for 25–30 minutes, stirring halfway through, until tender and lightly crispy.
  2. Cook the Chicken SausageHeat a skillet over medium heat. Add sliced chicken sausage and cook for 4–5 minutes until browned.
  3. Cook the EggsIn the same skillet, melt butter or heat oil over medium heat. Crack eggs into the pan and cook sunny-side up or over-easy until the whites are set.
  4. Assemble the BowlAdd roasted sweet potatoes to a serving bowl or plate. Top with cooked chicken sausage. Place eggs on top.
  5. ServeGarnish with parsley or green onions if desired. Season with extra salt and black pepper to taste.
