Caramel Layer:

  • 1 cup granulated sugar
  • 1 cup light corn syrup
  • 1 cup creamy peanut butter
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt

Peanut Layer:

  • 2 cups roasted peanuts

Chocolate Coating:

  • 2 cups milk chocolate chips
  • 1 tablespoon vegetable shortening

Instructions

  • Prepare the caramel: In a saucepan over medium heat, combine sugar and corn syrup, stirring until smooth and melted.
  • Remove from heat and mix in peanut butter, vanilla extract, and salt. Stir until fully incorporated.
  • Line a baking dish with parchment paper and spread half of the roasted peanuts evenly across the bottom.
  • Pour the caramel mixture over the peanuts, smoothing it out with a spatula.
  • Sprinkle the remaining roasted peanuts over the caramel layer, pressing them in gently.
  • Let the mixture cool at room temperature until firm.
  • Melt the chocolate chips with vegetable shortening in a microwave-safe bowl, stirring every 20-30 seconds until smooth.
  • Cut the cooled caramel-peanut mixture into bars, then dip or drizzle each bar with melted chocolate coating.
  • Place bars on a parchment-lined tray and refrigerate until set.
